I marinated a pack of boneless, skinless chicken thighs before nap today! We would normally grill them on the BBQ, tonight I will put them on a cookie sheet (with foil) and bake them (sear them in the cast iron pan first).

I bet it turned out great. Another great way to cook chicken thigh is coq au vin in dry white wine sauce.
