Getting ready for a party in a construction zone

We are having a BBQ in the 'finished' backyard this Saturday with my inlaws.  It will be our first al fresco dinner party!
Unfortunately (or fortunately?), the yard is a construction zone once again as the landscapers fix the patio.  They should have it put back together tomorrow (and it should look better than ever!)

I am planning what to make for our guests (six adults, two kids, two toddlers).  I think the BBQ menu has to be EASY.  Mainly because I don't want to spend much time cooking (I would rather spend more time putting the food into the right mix and match of pyrex dishes), but also since chowing down on summer favorites is sometimes better than attempting dazzling new recipes!

Appetizers
- Fresh french baguette and old white cheddar
- Turkey kolbassa (for my nieces)
- Nacho dip and nacho chips
- Carrot sticks, grape tomatoes and cucumber wedges (these are the veggies that seem to go the quickest whenever I prepare full veggie tray)
- Roasted almonds
- ?

Main
- BBQ beef short ribs (quick and easy!)
- Spanish shrimp potato salad
- Bacon broccoli salad (mom's recipe, I don't think I've served this to the inlaws yet, but broccoli is on sale at metro and looking pretty fresh)
- Corn on the cob
- Garden salad (prepared by sister-in-law)
- My other sister in law will probably bring some take-out noodles or fried rice...

Dessert
- homemade cherry cheesecake homemade banana cream pies!
- fresh fruits
- smores!

What are your go-to appetizers?  I usually make these ... but they are becoming too predictable now.

  3. Your BBQ menu gets me drooling! My go-to appetizers are nachos, bacon-wrapped scallops, cocktail shrimps, and smoked salmon with cream cheese & capers...basically things that require little prepping and cooking. :-)

  4. will you post the recipe for spanish shrimp salad? sounds delicious!

My staples for a bbq are: skewered shrimp, boneless chicken thighs in my own marinade and corn on the cob (always corn!). I also love grilled veggies like zucchini, eggplant and bell peppers. And a spinach salad (tomatoes, cucumbers, feta, avocado, red onion) - always gone before I know it.

    have a great bbq!

  5. I posted the salad recipe! I have a wicked greek orzo salad recipe too but no feta until after baby comes! We don't grill the veggies because if my husband is required to do more than one thing on the grill, his head is likely to pop off! We often eat grilled mushrooms and zucchini when its just the three of us! LOVE IT!
